Callaloo (Vegan friendly)
1 can Stone Callaloo
1 tablespoon oil
1 Onion chopped
2 Cloves Garlic, chopped
2 sprigs thyme
1 tomato, chopped
1 Scotch Bonnet pepper (whole)
2 tablespoons water
Directions
Place callaloo in a bowl, rinse with water and drain.
Place oil in a large pot, add onion, garlic, thyme, tomato, and scotch bonnet pepper on medium heat and saute.
Add callaloo and water, allow to simmer on low heat for 5-10 minutes or until tender, season to taste.
