Ackee & Saltfish
1 can Stone ackee in salt water, drained
1 bell pepper
1 scotch bonnet pepper, chopped
1 onion, chopped
1 tomato, chopped
1 tablespoon Vegetable Oil
2 Spring onions, chopped
250g saltfish
2 cloves garlic, chopped
Directions
Put saltfish to soak in cold water for about 1 hour.
Pour off cold water; add fresh water and cook until tender.
De-bone and flake saltfish.
Heat Vegetable Oil and saute onion, garlic, spring onions, tomato, scotch bonnet pepper and bell pepper.
Add flaked saltfish; Stone Ackee and add Salt and Black pepper to taste.
Take care to toss lightly; cover and allow to stand over low heat for about 2 minutes.
